Cathie’s Carrot Cake / Cake Pops with a Cream Cheese Glaze

Cake Section:

Combine:

2 cups sugar

2 cups flour

2 t. baking soda

1 t. salt

¾ t. cinnamon

¾ t. nutmeg

Add; beat well:

¾ cup vegetable oil

¾ cup unsweetened applesauce

4 large eggs

1 t. vanilla

Stir in until well combined:

1 cup chopped pecans

3 cups (1 pound) finely grated carrots

Turn into thoroughly prepared Bundt pan

Greased and floured OR

PAMed and sugared OR

Cake release : equal parts flour, oil, and shortening beaten together with electric mixer

Bake 60 minutes in 350o oven

 

Glaze Section:

3 ounces cream cheese, softened

1 T. butter or margarine, softened

1 t. vanilla

2 cups confectioners’ sugar

3 T. plus 1 t. milk

Adjust milk and sugar as necessary

Drizzle over cake

 

Not every cake is going to come out of the pan perfect, and sometimes we just want something more manageable than a whole slice of cake. As a fun alternative, you can make Cake Pops!

Crumble entire cake into very small pieces with your hands

Mix in Cream Cheese Glaze until you have a nice dough of a workable consistency

Form 1 – 1 ¼ inch balls with a cooky scoop or your hands

Roll the cake balls in granulated sugar since they will resemble meatballs

These are delicious since you get some cake, icing, and the sugar with each bite!!
